One night, I was binge-watching YouTube as usual when I came across Laura Vitale’s vlog, where she was baking almond croissant blondies. If you haven’t heard of Laura Vitale, I highly recommend checking out her YouTube channel or her blog, Laura in the Kitchen—I really love her recipes. The blondies looked incredible, and even better, they seemed easy to make. I’ve always loved almond croissants, and since I’m not quite at the level of baking where I could tackle making croissants from scratch, these felt like the perfect next best thing.
I ended up baking about eight batches of these to share with friends and family in goody boxes. They’re absolutely delicious, especially when they’re still warm from the oven. If you’re looking for a sweet treat for any occasion, I definitely recommend giving these a try!

Almond Croissant Blondies
Ingredients
Base
- 8 tbsp of unsalted butter, softened at room temperature
- 1/2 cup of brown sugar
- 1/2 cup of granulated sugar
- 1 egg
- 1 1/4 cup of flour
- 1/2 tsp of baking powder
- 1/4 tsp of salt
Frangipane
- 5 tbsp of unsalted Butter, softened at room temperature
- 1/2 cup of granulated sugar
- 1 egg
- 2 tsp of vanilla extract
- 1/4 tsp of almond extract
- 1 cup of ground almonds
- 1 tbsp of flour
- 1/8 tsp of salt
- 1/2 cup of sliced almonds
Instructions
- Preheat your oven to 350 degrees.
- Line an 8×8 with parchment paper, spray the sides with some non-stick spray and set aside.
- In a large bowl, cream together the butter and both kinds of sugar until combined, then add the egg, whisk together for about 30 seconds before adding in the flour, baking powder and salt and mixing to combine.
- Using lightly floured hands, press the dough into your prepared pan and set aside.
- Cream together the butter and sugar in the same bowl, then add the egg and both extracts, once all combined, add the ground almonds, flour and salt and whisk until combined.
- Smooth the filling over the base, then sprinkle with sliced almonds and bake for 30 minutes or until golden brown and edges are set.
- Allow to cool before slicing and serving.
